I can't wait to get past training and into the open water. I found this on a SH3 forum.

"Well it started on a clear, cold night with a full moon. The lookouts are up on the tower doing a great job when they spot a Clemson Class destroyer.
I take a quick look with the UZO and find it moving at 25kts away from me. I think for a second, and for safety dive to periscope depth. I then think ah what the heck and at 2800 shoot off a single torp. (easy targeting). I follow the torp for kicks with the free camera and after ages see that I have scored a hit on the destroyer. I hit it right up the front near the bow. Just clipped him. Hmmm doesnt sink, but starts to noticebly sink lower and lower front first. I then use the hydrophone and hear that he has changed course and is now coming back towards me... afer a while I hear him stop?? ... So I can't resist and look again using the free camera. What do I find... well that smart **** destroyer Captain... instead of sinking he has gone and ran his ship up onto an island nose first. So I move my boat into position and as I am about to finish him off with a torp, the crew spot me and light me up like a roman candle. Guess they were still ready for a fight even after running thier ship aground. These guys dont want to give up easily. Well the shells start flying over my head, so I dive again and come around for a stern tube shot.... about 30 seconds later he is toast!! The water is that shallow that I am scrapping my bottom on the bottom and he settles on the bottom with his masts out of the water...
The AI in this game is awesome.. love it!!"

I played SHII for little while but had a few gripes that kept me from enjoying the game. I hope all the improvements aren't merely cosmetic.
My first gripe was the canned missions. I seem to recall reading SHIII has some dynamic campaigns?
Also, what REALLY REALLY bothered me, having been on a real ship before, was the navigation screen. Like no one on the development team had even conned a sailboat, if not a warship. Can you set waypoints? Can you measure distance and bearing on the chart? Does the chart show depth contours? And waht really bothered me... can you plot a targets' positions over time to see what he's doing?
PS Just watched tuturial on web site. forgot, you can set waypoints, and measure on the chart, but can't plot hisotrical positions and depth contours aren't shown. Still it looks to be improved a bit from before.

I think every mission is a 24 hour patrol. However, you can receive radio messages notifiying you of convoy and ship positions. I always go the my patrol area hang around for 24 hours and then start patrolling a wider area. Most of my convoy encounters come from radio notification. I then plot a course for intercept on the nav map and go for it.
Realistically, a u-boat would never get a mission "go sink this battleship" while it was in port because it would never get to it. They would go patrol an area and would get contact updates via radio and sometimes got lucky enough to find a convoy on their own.

Check your CPU temp and see if its dropping at the same level.
With BF* I always had a problem where if my CPU got up to 55c it would CTD with no error. I also had it in a few other games.
