I don't really consider one hand dominant over the other. They have personalities. One prefers to rush head-long into things, grappling with life, as it were, while the other likes to hang back, check things out, lending a 'supporting hand' so to speak.
When I play with my instrument, the right really just prefers to bang away, while the left likes to finger the neck, moving up and down in slow, sometimes fast riffs.

When I shake hands with somone: righthanded.
When I use my mouse: right handed.
When I use my joystick: right handed
When I eat my bread: right handed.
When I gear up: right handed. (doh)
When I drink my coffee,I mean my beer: right handed.
When I use a lighter: right handed.
BUT: when smoking my cigarette: left handed!!
